Hotflash! Menopause Matters: Meno-Healthy Recipes
Soybean Sukiyaki

This delicious vegetable and soybean recipe comes from HotFlash! member Carol Esteki cesteki@mailcity.com. It's very simple to make and good for you too!
You can use olive or canola oil in this recipe. A non-stick pan is a good idea for cooking this dish, you will be able to use less oil.

  1. Cook 1 cup of sliced onions in hot oil ( about 3-4 tablespoons) until golden. Add 1 cup of sliced celery, 1/2 cup of sliced water chestnuts, and 1 cup of sliced mushrooms . . . and saute these ingredients for 2 minutes more.
  2. After that's done, stir in 1 cup of cooked soybeans and 1 cup of sliced green onions.
  3. Then, in a separate bowl, combine 1/4 cup of soy sauce, 1 1/2 cups of broth (beef, chicken, or vegetable), 2 tablespoons of brown sugar, and 1/2 teaspoon of pepper. Pour this mixture into the frying pan with the vegetables, cook it for 5 minutes, and serve over rice or noodles.
