Fried Rice with Tofu

What you need
  • 1 Tbs. Oil
  • 8 to 10 white button mushrooms, sliced
  • 1 small red onion, finely chopped
  • 1 green bell pepper, seeded and diced
  • 2 medium tomatoes, diced
  • 4 oz extra firm Tofu, diced
  • 1 tsp. paprika
  • 1/2 tsp. pepper
  • 3 cups of cooked brown rice
  • 1 1/2 cups of broccoli florets, blanched
  • 3-4 tsp. soy sauce
  • 1 cucumber, peeled & finely chopped
  • 2 green onions, chopped
What you do
  • Heat oil in large skillet or wok over medium-high heat. Add mushrooms, onion and bell pepper; stir fry for 5-6 minutes. Add tomatoes, tofu, paprika and pepper. Cooking and stirring for 4 minutes, reduce heat to medium. Stir in rice, broccoli, and soy sauce. Stir and cook until rice is steaming, about 3 minutes.
  • Spoon mixture onto serving plates, top each with cucumber and green
    onions.
