What you need
- 1 Tbs. Oil
- 8 to 10 white button mushrooms, sliced
- 1 small red onion, finely chopped
- 1 green bell pepper, seeded and diced
- 2 medium tomatoes, diced
- 4 oz extra firm Tofu, diced
- 1 tsp. paprika
- 1/2 tsp. pepper
- 3 cups of cooked brown rice
- 1 1/2 cups of broccoli florets, blanched
- 3-4 tsp. soy sauce
- 1 cucumber, peeled & finely chopped
- 2 green onions, chopped

What you do
- Heat oil in large skillet or wok over medium-high heat. Add mushrooms, onion and bell
pepper; stir fry for 5-6 minutes. Add tomatoes, tofu, paprika and pepper. Cooking and
stirring for 4 minutes, reduce heat to medium. Stir in rice, broccoli, and soy sauce. Stir
and cook until rice is steaming, about 3 minutes.
- Spoon mixture onto serving plates, top each with cucumber and green
onions.
