Hotflash! Menopause Matters: Meno-Healthy Recipes
Tofu Ginger Soup

What you need:
  • 1/2 pound of firm tofu cut into 1 inch cubes
  • 2 teaspoons of freshly grated ginger
  • 1 tablespoon of olive oil
  • 4 Cups (1 quart) of low sodium chicken broth
  • 3 tablespoons of green onions
What you do:
  1. Heat olive oil in medium sized pot for about 1 minute on low medium heat settting. Add ginger and
    cook on medium heat for about 2 minutes.
  2. Add chicken broth and simmer covered for about 10 minutes. Then add tofu and scallions. Gently
    simmer for 10 minutes more and serve.
  3. I sometimes add raw shrimp with the tofu and onions for a change in pace.
