What you need:
- 1/2 pound of firm tofu cut into 1 inch cubes
- 2 teaspoons of freshly grated ginger
- 1 tablespoon of olive oil
- 4 Cups (1 quart) of low sodium chicken broth
- 3 tablespoons of green onions

What you do:
- Heat olive oil in medium sized pot for about 1 minute on low medium heat settting. Add
ginger and
cook on medium heat for about 2 minutes.
- Add chicken broth and simmer covered for about 10 minutes. Then add tofu and scallions.
Gently
simmer for 10 minutes more and serve.
- I sometimes add raw shrimp with the tofu and onions for a change in pace.
