What you need:
- Preheat oven to 350 degrees.
- Have ready:
- Blend in a blender until creamy:
- 1/2 lb. tofu
- 1/2 cup walnuts
- Pour the blended mixture into a bowl and mix in:
- 1/2 cup olive or canola oil
- 2 cups sugar
- 1 tsp. vanilla
- 1 tsp. salt
- 1 tsp. baking soda
- 4 cups unbleached white flour

What you do:
- Mix well by hand or electric mixer. Roll into 1 1/2 inch balls and place then 2 inches
apart on oiled
cookie sheets.
- Press thumb in middle of each ball, leaving a depression. Bake for 10 minutes, remove
sheets from oven and drop 1/4 teaspoon of jam in each depression.
- Bake 2-3 minutes more. Store when cool with wax paper between layers.
