Jam Dot Cookies (Tofu)

What you need:
  • Preheat oven to 350 degrees.
  • Have ready:
    • 1/4 cup any flavor jam
  • Blend in a blender until creamy:
    • 1/2 lb. tofu
    • 1/2 cup walnuts
  • Pour the blended mixture into a bowl and mix in:
    • 1/2 cup olive or canola oil
    • 2 cups sugar
    • 1 tsp. vanilla
    • 1 tsp. salt
    • 1 tsp. baking soda
    • 4 cups unbleached white flour
What you do:
  1. Mix well by hand or electric mixer. Roll into 1 1/2 inch balls and place then 2 inches apart on oiled
    cookie sheets.
  2. Press thumb in middle of each ball, leaving a depression. Bake for 10 minutes, remove sheets from oven and drop 1/4 teaspoon of jam in each depression.
  3. Bake 2-3 minutes more. Store when cool with wax paper between layers.
